What can I cook for my new boyfriend..?
He is lactose intolerant (not horribly but nothing too creamy) this is all I know so far from asking questions and going out to eat…
he likes pulled pork, burgers, steaks, some seafood & nothing spicy… he eats a lot of grilled chicken and garden salads. Love ranch dressing lol.
Any ideas/recipes would be so helpful!!
he does eat chinese food but he gets chicken with snow peas and rice… no sauce on it.
he also hates parm. cheese lol so picky I KNOW
The first thing you mentioned is pulled pork, so I think if that is one of his favorites, you should make that. This recipe will allow for leftovers, which you could send with him and/or have him over for another meal. I make sandwiches with the recipe, ladle with bbq sauce and top with cole slaw.
BBQ Pulled Pork
1 boneless pork shoulder (4 1/2 – 5 pounds)
Dry Ingredients:
1 1/4 cup brown sugar
2 tbsp paprika
2 tbsp chipotle chile powder
1 tsp cayenne pepper
2 tbsp chile powder
3 tbsp kosher salt
2 tbsp black pepper
1 tbsp garlic powder
1 tbsp onion powder
Wet Ingredients:
1/4 cup cider vinegar
1/4 cup vegetable oil
In small bowl combine dry ingredients and mix well. Reserve half of mixture for later use. Add wet ingredients and mix well.
Trim excess fat from port. You want a 1/4 – 1/2 inch layer on the top. Place meat in a glass baking dish and rub marinade mixture all over pork, get the nooks so the salt can penetrate the meat. Cover with plastic wrap and marinade in refrigerator at least 4 hours and up to overnight.
The Sauce
1/2 cup cider vinegar
1 can cola, not diet
2 sweet onions, thinly sliced
3 cloves minced garlic
Place roasting pan on stove top. Tilt the pan and spoon out fat, try to keep the brown bits in tact. Turn to medium heat, add 1/2 bottle dark beer to deglaze, scrapping the brown bits off the bottom. Add 1 table spoon olive oil and the onions. Cook until tender. Add garlic cook 5 minutes or until soft. Add 1/2 can cola and cook until mixture is reduced by half.
Mix the following ingredients in a medium glass bowl. Add to roasting pan and cook all ingredients until heated through.
Barbecue Sauce
2 cup regular barbecue sauce
1/2 cup cider vinegar
1 cup ketchup
2 tbs Tabasco
2 tbs pepper
2 tsp salt
2 tsp garlic powder
2 tsp onion powder
1 tsp chile powder
2 tbs brown sugar
# Allow meat to sit at room temperature for 30 minutes before cooking. Preheat oven to 325 degrees. Place pork in a roasting pan. Cook for 3 1/2 to 4 hours or until the outside is crispy-brown. Let meat rest on a cutting board 10 – 15 minutes before pulling apart. While meat is resting prepare the sauce.
