Gourmet Cowboy seems an oxymoron, that is, until you take a look at "The Cowboy Gourmet" by Bob Kinford. But maybe this is an oxymoron in itself same. Kinford cowboy has been a cowboy for most of his fifty-five. Until the meeting of his wife Catie, eight years ago, has spent most of his life adult to work on remote ranches, taking care of cattle and horses in training.
Kinford's most recent book, The Gourmet Cowboy (cowboy style gourmet kitchen) is a collection of over 90 recipes you have cooked on ranches in the west. Living miles from the nearest paved road not have the convenience of stopping at a restaurant after twelve hours in the saddle so I had to cook for himself. Her recipes are simple enough to a new girlfriend, but they have a gourmet touch that would be the envy of any cooking show star. A good example is Smokey Shrimp Bisque:
20 shrimp Med
10 cloves garlic
1 / 2 C grated Muenster cheese
1 pt Cream
6 cherry tomatoes
3 green onions
2T olive oil
1 T Fresh basil finely chopped
1t finely chopped fresh Rosemary
Clean and peel shrimp. Peel the garlic. Grilled garlic and shrimp for 3 minutes (preferably with charcoal,
no gas). Cut cherry tomatoes into quarters. Chop green onions into inch long pieces. Saute 'tomatoes, onions, basil and rosemary in olive oil over medium heat for three minutes, stirring occasionally.
Add cream and slowly stir in cheese. Increase heat to medium high. Once cream begins to boil, reduce to simmer, stirring occasionally until the cream begins to thicken. Add shrimp and garlic. Simmer
for 2 minutes.
Makes 4 servings.
