Ranch It Out

King Ranch Chicken is probably the best known and loved pot in Texas. But how chicken and joined the King Ranch is unknown to this day.
The King Ranch, the largest ranch in Texas, is known for its ranching and oil and gas reserves. But the chicken has virtually no connection with this ranch. Despite this mystery, this classic recipe for chicken casserole is a part of Texas tradition food to be experienced by all.
King Ranch Chicken Casserole Recipe
Ingredients
Sauce:
2 tablespoons unsalted butter
2 cloves garlic
1 / 4 teaspoon chili powder quality
Pinch ground cumin
2 tablespoons purpose flour
3 / 4 cup unsalted chicken broth
Milk 1 / 2 cup
2 tablespoons sour cream
salt and pepper to taste
Filling:
1 tablespoon unsalted butter
1 red / 2 medium green pepper, chopped
1 / 2 medium onion, chopped
1 / 4 cup green New Mexico or Chile poblano, chopped
8 oz fresh mushrooms, minced
1 / 2 cup diced canned tomatoes
2 tablespoons peppers
Vegetable oil for frying
8 corn tortillas
3 cups shredded cooked chicken, diced
1 1 / 2 cups cheddar cheese
1 / 4 cup scallions
1 / 4 cup sliced pimiento-stuffed green olives
Getting There
Preheat oven to 350 degrees F. Grease a 9 "x 12" baking dish.
In a medium saucepan, melt butter. Add the garlic, chili powder and cumin and saute for a couple of minutes. Sprinkle with flour, stirring. Slowly pour the chicken broth and milk in the pan, stirring continuously to avoid lumps. Simmer the sauce for 3 minutes, or until thickened.
Add sour cream, salt, and pepper. Reserve sauce for later. (The sauce can be made ahead and refrigerated.) Â Â Â
To make the filling, melt butter in a skillet. Add all the rest of the filling ingredients and saute until soft and well combined. Reserve filling.
Heat about 1 / 2 inch of oil in a skillet small. With a pair of tongs, dunk each tortilla in oil for a few seconds, or long enough to soften.
In the baking dish, layer half of tortillas and chicken one third of the sauce, and half of each filling, cheese, scallions and olives. Pour about one third of the sauce, then repeat layers of remaining ingredients. Finish with the last of the sauce.
Bake King Ranch chicken casserole for 30 minutes, just until heated throughout and bubbly. Makes 6 servings.
